AGATHI KEERAI SOUP

INGREDIENTS

Agathi Keerai.           One bunch
Coriander.                 One bowl
Butter.                            50 g
Onions.                            3
Tomato.                           2
Pepper powder.              4 tsp
Salt
Maida flour.                   3 tsp

PREPARATION

Wash and clean the spinach.  Boil all the leaves and filter the water.
Add chopped onions, tomato in pan that has hot butter in it.
Take another pan and spread the butter all over to fry maida till it gets light brown.  Add the water mixed with fried onions and tomato.  Allow to boil the water after adding pepper, salt and coriander leaves.

This soup has a power of giving strength, strong body and healthy digestion. 

AGATHI KEERAI SAMBAR

INGREDIENTS


Tamarind                       lemon size
Coriander seeds.              2 tsp
Asoefitida.                         2 tsp
Turmeric.                            2 tsp
Salt
Grated coconut.               3 tsp
Oil
Toor dhal.                         50 g
Dried red Chili.                6
Agathi Keerai.                2 bowls
Small onions.                 20
Tomatoes.                      4
Mustard seeds.              2

PREPARATION

Soak the tamarind in two glasses of hot water.  Cook toor dhal, asafetida, turmeric and oil in a cooker.  Chop Onions, coriander leaves, curry leaves and Onions.  Grind coriander seeds, dried red Chili in a mixie.    Agathi Keerai should be washed and placed in a separate bowl.
In a hot pan, pour oil and sow some Mustard seeds, onions, curry leaves, tomatoes and fry it. Add the agathi Keerai and close the lid.   Pour the tamarind juice, boiled toor dhal and grinded coriander powder.  Take required amount of salt and put it.  Garnish with chopped coriander leaves, after transferring into a bowl.   This Sambar maintain good health.

AGATHI KEERAI DELIGHT

INGREDIANTS

Mustard seeds.          1 tsp
Urad dhal.                    1 tsp
Agathi Keerai.             1 bowl
Grated coconut.           3 tsp
Jeera seeds.                 1 tsp
Salt
Oil
Dry red Chilli.                  3
Small onions.                  15
Tomatoes.                       2

PREPARATION

In a pan, Pour 3 tsp of oil.  Add Mustard seeds, urad dhal, red Chili, Onions, tomatoes and fry till it forms a thick gravy.   Put the clean and washed greens and close lid for few minutes.  Open and close the lid till the greens are well cooked.  Add salt, grated coconut and garnish with chopped coriander leaves if required.  Now, the delight is ready for Chappathi and dosa.

AGATHI KEERAI POWDER

INGREDIANTS

Dried Agathi Keerai.                       2 bowls
Pepper.                                                  40 g
Jeera seeds.                                         40 g
Turmeric.                                               20 g

PREPARATION

Grind the above ingredients in the form of a fine powder and store it in a air tight container.

MEDICINAL PURPOSES

Daily one spoon in the morning and evening will results in healthy eye sight, proper digestion, cures bile problems and maintain normal body temperature.
